It depends on which bar I go to. If I'm going to my local, I am on a first name basis. A place I don't know, I am formal, though this day in age, sir and ma'am are very rare formalities at a watering hole. I have feigned love to get free beer(s) though~

I have known my bartender(s) for about 15 yrs (same little bar), and we are on a first name basis (informal), but not love.

I don't have a regular bar but I tend to keep things very formal and polite, after all, I am on a night out with my friends, not there to socialise with the bar staff.
