well it depends on your phone manufacturer and model.
for general nokia series 40 phones , SETTINGS->PHONE SETTINGS and there you'll see an option to restore factory settings.
warning: remember any phone security codes that you might have created in order to perform the reset.
for a series 60 nokia phone the procedure is similar to that of a series 40,but in addition to this there is also another method using which you can hard format your phone memory(the phone will return to a state just as it was when you bought it)
to do this,
*turn off ur phone
*press CALL(green button) + def/3 + */+ simultaneously and switch on the phone.
warning: make sure that you have full battery power while you perform the above mentioned method..

It depends on what kind of phone you have. ON my Motorola E815, you go to "Phone INfo" on the main menu, scroll down to "Storage Devices", select the Phone or the Mini-SD Trans-flash card, and select format.
