They helped for Americans to united behind a common cause and have a degree of organization. After the British began to take the Americans out of power of their government and nullifying state governments, the colonial assemblies were basically the underground remains of the government and the foundation for the governments that would form under the articles of confederation. One issue which demonstrates this is the fact that they maintained and promised the funding of the colonial army, which despite the folklore of the militias winning in back country guerilla warfare, was the real military might of the country.

After 1763 the British dropped their policy of "salutary neglect" and put more stricter controls on the colonies. This included many taxes to help pay for the war which is referenced by the date you were given-1763. This was the year that the Peace of Paris was signed, ending the French and Indian War (something which is considered a huge catalyst of the American Revolution). Taxation without representation in the government that was putting these taxes on everything from sugar to tea to paper was something which all colonists resented. There were a few assemblies, probably the most famous was the Stamp Act Assembly. This played a big role in fighting off the Stamp Act (which placed a tax on papers). It helped set up boycotts and resistance that led to the repeal of the tax shortly after it was issued. There were probably more gatherings of colonists that were lesser known. These in general show the unity that colonists were now showing against a common enemy- the British. 1763 marked a huge change between the colonies and England, and the assemblies are one of the things that show this.
