It's traditional really. The way coins were struck from the very beginning just resulted in a round shape. I understand, however, that many years ago Saudi Arabia made a coin in the shape of a sword.

This force would deform a square or other shaped flan, (blank coin metal). Today governments have the technology to make them any shape, but they have been minted round for over two millenia, so people expect them that shape.

well, think about it. we carry coins in our pockets every day. (well, most of the time) So if coins were triangular or square or had any type of sharp edge, then they would poke us in our pockets. Simple as that.
