It depends on whether you were in school within the past 5 years. If so, all you need to include is since school. Otherwise, I'd put the past 7 - 10 years. It also depends on whether you were at your jobs for a long time or not. It may not be a good idea to list the 8,000 jobs you've had in the past 10 years. Just go for 5 years in that case.

Your resume should never be more than 2 pages (unless you are applying for a professorship at a university), and preferably one page. Employers only read the first page anyway.

On APPLICATIONS usually they TELL you how far to go back. On a resume, it is really up to you. More importantly with a resume is to list work experience that has something to do with the job you are trying to get. If you are trying to get a job in health care and you have already worked three years in health care and before that at fast food joints, only go back three years. If they ask you in an interview what you did before that, you can explain.
Sometimes on a resume if your work history is spotty or long and not focused in a particular field, you may way to include an "Skills Summary" section in your resume, near the top, that would sum up all the skills you have learned at your previous jobs, in school and in life (skills that will help you get the job you're applying for). That will take the focus off of your strange work history and put it on what you can do for that company.

Only your last job or two. Employers spend an average of 7 seconds reading someones resume.

Hello. You should never go back more than 10 years. I usually go back to five. If you go back too far that will show possible unstability with multiple job changes. Most employers want to see a potential employee to have longevity in previous employment. Hope that helps, Good Luck!
