This is about gravity. Everything that falls gets attracted by the earth. We call that 'down'. Up is the opposite. It is the place anything lighter then air goes to.

If you are under water and you don't know where down and up are, blow out some air and it will go up.
If you are buried in an avalanche and you don't know which way is up, let saliva flow out of your mouth. The place your saliva drips to is down.

That's how you know if up is really up.

Something like that? :)

We don't. I's just our perspective. If we lived our life on our head then up would be sideways.

Technically direction is all purely based on "relativity to an object". "Up" is towards the sun when its up. But to people on the other side of the earth, it would be down. Its all relative.

i guess you just point to the sky and say "up", and then point to the ground and say "down"

keep it simple dude
