It's a tradition. It started when painters used mostly white paint.

AlphaFemale is right. I used to be a residential painter (interior & exterior) and my boss told me to wear a white T-shirt, white painter's pants & a baseball cap to work. The less paint I wore, the more skilled I was perceived to be.

It used to be a matter of pride to be able to paint a house and leave with the pants still white. It showed skill at the job.
