He wants to be seen as an everyday man, instead of an ivory tower politician. A man from Texas is more likely to be seen as "down to Earth" and in touch with the wishes of the "common man" than a rich, pampered man that graduates from an ivy league college in New England. Hey, if presenting your image in a way that makes you more likeable to the voters works, then any politician will do it, so I don't think W is unique that way.

Because it was Karl Rove's plan to cast him that way. He's a New England blueblood. He bought his "ranch" in 1999. It's actually an old pig farm with five cows on it that belong to the former owner. He had the house built there when he bought the place. There are no horses on the ranch because he doesn't ride. All you ever see him do is "clear brush". He doesn't know anybody in Crawford except for the ranch manager, the Secret Service agents, and one neighbor cleared and vetted for photo-ops. That John Deere tractor and haystack that reporters broadcast in front of haven't moved in six years.
Bush is as much a Texas cowboy as he is a Brooklyn wiseguy. He's not.
But enough hayseed rubes buy the fabrication hook, line and sinker and they will be on this thread calling me a liar. So the ruse works. Kudos to Karl Rove.

Because he feels like it makes him more credible with rural, "get 'er done" type Americans. Being from Texas also allows him to distance himself from his rich, upperclass priveliged background.
Basically, it's a PR stunt to make him seem like a normal guy.
