The best place to learn, breathe and eat French is to stay with a French family any where in France. The key is staying with a family and living thier life style. Paris may be a bit cosmopolitan, so maybe a bit of a rural siding like Limoges? would be useful. You also get to appreciate good wines.

I completely agree with "B M", try to find a welcoming family anywhere in France, and avoid Paris for living.
Paris is wonderful to visit, but is expensive and not secure. People there see a lot of tourists and are not kind with them (even with French tourists, it's not a question of not loving Americans). It is the same in Nice.
Rennes in Brittany is interesting, try also the towns of the Nord-Pas-De-Calais, especially Lille. Both Rennes and Lille are very well linked to Paris by very good trains (www.sncf.com)

The Loire Valley. Some great vineyards/wine, fantastic people, some of the best countryside, Chateaus and fine food.
The Langueduc also rocks, with the Pyrenees, the Med, and great food/drink.
