I always have to change the 5 gallon water bottle to our water dispenser and end up spilling a fair amount. I just want to know if there's an easy way to do it without spilling.

This is just off of the top of my head, so it might or might not work. Take a stiff piece of cardboard that is big enough to cover the end of the bottle. Squeeze the bottle to get a little air out of it then put the cardboard over the opening.
As a kid we used to take a glass of water and put an index card over it then turn the glass over. It created a vacuum and you could let go of the card and the water would stay in the glass for a few seconds.
I'm guessing that the cardboard might hold the water back until you get the bottle in position then quickly remove the cardboard and put the bottle the rest of the way in.

If I'm wrong, It's still your mess to clean up. :-)

I changed the water cooler all the time, I just turned it over over the top of the pool and did it quickly. If it spilled it was minimal.

Culligan has the bottles that don't start dispensing until you pop the bottle into the dispenser (there's a thing that pierces the seal on the bottle).
