I'm looking for background middle east music like that found in the video game Prince of Persia: Sands of Time or the movie Syriana.

Dunno, haven't heard either. You can check in the credits for the song titles, do a search with those and come across some. I can recommend some of my favorite artists, but they're singers, not necessarily great for background. Anything involving tabla (a type of drum) is good for bg, and almost all authentic bellydancing music has tabla.
Natacha Atlas (Transglobal Underground is the name of the band she used to be in, now she's solo)
Sameera Said
Nancy Agram (or Ajram, depending on which country you're in)
Cheb Khaled and Cheb Mami
Rachid Taha
Outlandish (a sort of westernized band hailing from Denmark)

Arabian Knightz
MTM is fun
Umm Kalthoum is a classic (any fans of Arab music know her)

The music generated from India has American appeal.It is very meditative inducing.

Gunfire, screaming and death, to the accompaniment of some rag head blowing on a goofy flute with a bulge in the middle and his eyes rolled back in his head. I would rather listen to ghetto, gutter, prison, garbage C-rap..........
