Our refrigerator used to run constantly....then it stopped running completely and the temperature started to rise. We noticed that the coils and everything underneath were extremely dirty and covered in dust. We cleaned all the dirt and dust and the fridge started running again, only now it cycles on and off every 15 minutes or so. Not sure if this is what it's supposed to do or if it's getting ready to die completely.

You fixed it, you didn't kill it. It's supposed to cycle on and off.
I suggest you clean it more often.

With the coils being dirty it didn't allow for air flow over the coils. This is how the refrigerator exchanges heat, and is the reason it was getting warmer. Keep the coils clean (If there is a drip pan under there clean it as well). Make sure you have adequate air flow around the back and underneath. It will cycle on and off depending on the heat in the room. You may notice after cleaning the fridge will cycle less often, especially if the room is cooler.

15 minutes is better than constantly running, but that does sounds like its still not quite right. Check under and behind to be sure you got all the dust cleaned up. Be sure the area where the compressor is mounted is also reasonably dust free. If those are good, check your door gaskets to be sure they are still pliable, not cracked or flattened, and seal properly. If the fridge can't keep the room heat out, it'll cycle more frequently trying to maintain the cooler temperature. It could need service due to a worn compressor, bad thermostat, or low refrigerant. At that point, it may be just as cost effective to buy another than to pay for service. I hope this helps.

this is notmal keep the coils clean and keep an eye on the tempreture with a thermometer it should read 37-38 degrees
