Don't look at the handlebars or just in front of you. Look further out over the bike, where you want the bike to go. The closer you focus to the handlebars or your feet, the less stable your U-Turn will be and the more fearful you will be.

Also, practice throttle control. Learn to be smooth. If your bike has a jerky throttle, take the test on another bike.

Last of all, don't use a bike that is too large. A small displacement bike makes the road test a breeze.

I agree with the above. Use a smaller sized bike (125-450 cc) and practice A LOT before you take the test. The idea is not that you can "do a u-turn" but that you have sufficient confidence and skill to be able to do this maneuver consistently.
If you CAN'T do this U-turn, then you are definitely NOT ready to take your bike out into the big bad world.
Practice until it is second nature (and trust me, it will become second nature eventually) and THEN take the test.
Only then will you be ready to leave, grasshopper.

Practice, practice, practice! Find a parking lot or Cull DE sac, and do nothing but tighter and tighter figure 8's for 15 minutes, and then go take your test. It'll be a snap. The trick with U turns is the speed. Once you know how fast you need to go to keep your bike upright, you have it made.

In addition to all the good advice above - remember to keep your head UP, your knees tight to the tank, and most importantly - YOU GO WHERE YOU LOOK! So don't lock your eyes on the curb or any other obstacle.

Do the test on a Smurf sized bike. If some blue dude only 3 apples high can do it, so can you.

Also it helps if you picture your examiner naked. he's the one who should be nervous, not you.

Just think that if you don't then you'll have to go through it all over again until you do.
Calm down and be positive, you've done it many times before, just relax and enjoy it.
