It depends what you mean by "cannibal". Jeffery Dahmer type cannibals seem to be pretty indiscriminate in what they consume.

However, ritual cannibalism as practised in the past tended to be linked to an animistic world-view; they generally consumed the legs, arms and brains of the victim, and often the heart as well. Each of these was seen as holding a separate spirit, and by consuming them the cannibals incorporated these spirits into their own bodies.

Contrary to the Hollywood image, it was hardly ever pretty young white women who were cannibalised. It was nearly always warriors and enemies of some stature -- people whose deeds had proved they possessed strong spirits. It was, thus, a great compliment to be cannibalised.

There are "different" types/forms of cannibalism. I wouldn't know - I'm not a cannibal. However, from what I've read and heard about the obvious criminal ones (normally, serial killers) that have been caught, there have been loads of "remains" still not consumed.
The "media" really didn't mention the specific items that "remained", however, except in the case of Ed Gein, who had "tanned" the hide of several victims (whether dead already or readily killed) and had the hides in the house (as a lamp shade, for instance)! Gein, also, had a victim's heart in a pot on the stove, cooking.
Chiketelo, the infamous Russian serial killer, cooked and ate the sex organs of his victims. But, left most of the rest of the body in woods (not necessarily buried), etc, where, sometimes they were found - sometimes not! His was 52 victims that included males and females.
In the case of Jeffery Dahmer, if I'm not mistaken - as seen on television - barrels and barrels of "remains" was taken out of his apartment. Some items he cooked and ate - and some he kept in things, like trunks, etc.
There seem to be no rules involved with those who have done so for survival. The Donner Party is the main example of this form. However, in recent years there was a plane crash, of members of a soccer team, in the Andies where it was practiced for survival. In these cases I got the impression that nothing was left, everything was eaten.
Nothing seemed to be left of the victims in the Guangxi Provence in China, during the Communist party rule of Moa Zedong (Tse-tung). This ritualistic political dehumanizing cannibalism didn't really "fit" other forms!
In Paupua, New Quinea - it is understood that the natives still practice ritualistic cannibalism in the form of partaking of a relative upon death, as a form of reverence. Only a very small piece of flesh is eaten - the rest is buried.
So, in answer to your question - one has to say that the criminal cannibals don't seem to eat "everything", however, some others "do" (for survival, and political), and then some others "don't" (family rituals)!

I study that historic cannibal warriors believed that eating their enemies assimilates the useless persons soul into their very personal, making them extra efficient than they could be in the adventure that they didnt devour them.

I doubt very seriously that many active cannibals will answer your question. Anyone else who answers it would only be guessing.
