Sardines or pilchards are a group of several types of small oily fish related to herrings, family Clupeidae. The terms are not precise, and the usual meanings vary by region; for instance, to many people a "sardine" is a young European pilchard. FishBase, a comprehensive database of information about fish, lists at least six species called just "pilchard," over a dozen called just "sardine," and many more with the two basic names qualified by various adjectives.
Canned "sardines" seen in supermarkets may actually be sprats or round herrings.

Sardines do have bones in them, but they are very soft and are usually eaten along with the rest of the fish. However, the heads are usually removed. I'm going on experience of eating them as a kid. I liked the taste then, but don't like them now.

Hey the sardine company decapitates the sardines, but I think they boil the sardine before that because the bones are in them but you can eat 'em because the bones crush or dissolve easily

It's a fair assumption that you are not an American! The nearest thing to eating whole fish I have ever come is eating canned sardines and they have ben scaled and the heads removed! I assume you are kidding about jellyfish. I would not consider eating eel if I knew what it was.

I don't know anyone who eats the head (although I suppose it is possible). The bodies of the sardines, as well as other fish like anchovies and herring, contain bones. These bones are very delicate and perfectly edible--in fact they are very nutritious.

Canned sardines are headless but to have very thin bones that are OK to eat.

yes Sardines have bones in them,Sardines have no head when packed is can's,but in some restaurant they are served whole either with a cream sauce,wine sauce,tomato sauce,prepared mustard sauce and dill or herb sauce.
