Demeter, as well as all the Georgikoi(the agricultural gods and goddesses) I've always loved the story of Persephone and Haides as well. I'd love to explain further but this link will tell you everything you wanted to know about Greek Mythology.

The Goddess Athena
She was a daughter of Zeus. She leaped from the head of Zeus, already adult, dressed with her armor. In poetry she is the incarnation of Wisdom, Reason and Purity.
Athens is her city; the olive tree, created by her, is her tree; the owl, is the birth consecrated to her.

Eris, because chaos and confusion are most prevalent in the world. Read about the party on Olympus, the golden apple and the Trojan War. If they had invited Eris, the world would not have had that first war.

I've always liked Hephaestus. Aside from Asclepios, he's about the only god who's good for something. The rest of them are worthless -- wastes of good ambrosia and nectar in my opinion. (Yeah, Athena's okay too but what hardship has she overcome?)

Athena & Selene
Athena - because she is the goddess of wisdom, and was worshipped for her mind and knowledge, not her body and beauty.
Selene - It's quite simple. I've always loved the moon.

Hard choice, it would have to be between Hephaestus, Hermes, and Hestia. Hephaestus was usually really sweet, Hermes was crafty, yet kind, and Hestia, well, she was goddess of the home, which is my favorite place.

Medusa. Not a goddess exactly. But I believe hair are the excesses of the mind, and Medusa's hair were snakes - WOW! that is so wild!

Athena: As the goddess of wisdom and war, she was revered not for her stunning beauty (like Aphrodite), but for her mind and cunning.
