We cook food because it enhances the flavour. There is no nutritional difference between eating a chunk of suet (raw animal fat) and a handful of dry grain, and eating that same combination made into a croissant. But, obviously, the croissant tastes better. Other instances involve heating food to tenderize it. Humans are one of the few animals who do alter their food before eating it. There is a group of monkeys in Japan who live near some hot springs, and they have been observed placing food in the hot water before eating it. Who knows, maybe in another few thousand years, they'll discover ketchup?

Cooking is literally part of human evolution. When you look at the transition of human fossils, Homo Erectus evolves smaller teeth and less powerful jaws in order to have a more humanlike skull at around the same time he begins cooking with fire.
Cooking allows us not only to soften food so that it can be eaten with the relatively weak jaws and teeth that we have, but it also sterilizes food, getting rid of parasites and bacteria. And with many roots and vegetables, cooking releases key nutrients and eases digestion.
