i know from experience that the carburettors of two stroke engines have to be run empty of fuel every time after a trip, the fuel causes the jets to film up, and then it causes similar symptoms as those you describe.When the choke is used , it seems to run better as well .
This happens for sure if engines stand for long without use too.
Clean jets are crucial in carburettors.

I have this same problem with my 16 ft tri-hull that has a 65hp in it. Runs perfectly with a few people but I once had the load capacity of 6 with two ice chest and I had some trouble planeing out. I finally played wiith my tilt trim a while and found a good position. Used alot of gas but was able to even pull a tube!

There are basically three things to look at assuming the engine is in good condition 1) Hull design and load capacity,2) type of propeller-speed or load 3) would the addition of a planing fin help to overcome problems with weight distribution,.

There could be a variety of problems.
Fuel jets clogged. At the end of each season Stabil should be used to prevent the fuel from drying and leaving a varnish inside the carbs. A few bucks today can save plenty later on.
Improper point gap, weak coil, boat overloading, wrong prop, are a few of the possible cures.
