Both, first the salt has a chemical reaction with the snail or slug which causes the "sizzle" then it dies.

I think with it being a slimy and cool animal, the salt dries it up and the pores close and it just withers and dies. I come from Bermuda where we have lots of snails especially after rain. I know it's cruel, but we just used to crush them. Try the salt thing and see what you find. If not just look it up online...lol. Take care.
