Our eyes close as a response to the sneeze to help keep our eyes in place.
Much like sneezing can be so sever that you may throw your neck out and be in need of an adjustment from a doctor.
"God Bless You" came from the medieval times when people encourage sneezing to prevent or release someone whom they thought were posest by the demons

There isn't a scientific explanation for why the eyes get closed while sneezing, but there are some readily apparent possibilities:
To stop the eyes from popping out and to stop the substances we sneeze from reaching the eyes.

Shutting our eyes while sneezing is an automatic action of the body. Sneezing involves the belly muscles, chest muscles, muscles that control our vocal cords, and muscles in the back of our throat. It is believed that if we do not shut our eyes while sneezing they might pop out of their sockets. Sneezing puts a lot of pressure on our head and respiratory system. Our eyes close to protect themselves.

When we sneeze, the air gets forced out of our nose at roughly 60 mph, so I would guess that the sheer force of the sneeze causes our eyes to close involuntarily.

It's a reflex action, and we don't really have control over it. Some people can sneeze with their eyes open, though.
Also that it was a belief that your soul left your body when you sneezed, so the say "God bless you".

When you sneeze, you force air very violently into your nasal cavity. This has tubes which lead to your eyes and ears. If you force air out of your nose while plugging it, you will notice that air will actually come out of your eyes. I've seen people blow out a match with their eyes this way.
If you don't close your eyes tightly when you sneeze, this air, which is under tremendous pressure, might do damage or at least hurt as it blasts out of your eyes.

It's a reflex to keep flying spit and snot out of our eyes. And I heard the people say "God bless you" when you sneeze because of the fear that when you sneeze, your soul is trying to escape from your body and saying "God bless you" saves your soul.

I think that its because we have to put our full consentration on it or that its a reaction to it. Like when you burn yourself you don't say ow then walk away. You shoot your hand to it and shout YOW!
But to tell you the truth...I don't realy know.
