I'd like to travel as a bagpacker to Morocco and it'll be in Ramadan time.

You will find that most businesses will open late and close before the sun goes down (to go home and break the fast).

It is to note that one should be respectful and not smoke/drink, etc... during this time, as those of the Islamic faith refrain from such things as well as food.
