I'm building a wall with natural quarry stone on an existing cement block skeleton, and I'm using playsand as filler (flows nicely, no stones). I need a cement that sets quickly, doesn't shrink, and doesn't cause grey/white "blooming". What is the difference between "type 10", "hydraulic cement", and "non-shrink grout"?

I think what you are talking about is Portland Cement. On the other hand cement is not made for that purpose. I think what you need is Mortar. It is made to be mixed with sand and not 60-40 sand gravel. Morter with sharp masons sand is what I would use. It is used for bricks and field stones and rocks and anything that is stacked.
