I'll assume you're talking about PPO (polyphenol oxidase) acting on phenolic compounds to produce dark colored polymers when squeezing juice from sugar cane.
A high PPO means the sugar is dark.
A low PPO means the sugar is light.
The alkaline solution is used to modify the PPO, and produce a (more marketable) white sugar.
Answer: White or Brown sugar.

cane juice forms phenolic alkalies which are crosslinked compounds which are generally colored.
I just made that up.
