We have lost the ability to produce CELLULASE, an enzyme required to digest cellulose.

That means that we can eat it, but we can't digest it. (the same reason when you eat corn, the kernels pass right through)

Most other land mammals still have this enzyme, so they can eat grass.

It is because that human has already adapted to the environment Human could eat that rice, but they couldn`t digest it. Scientifically it is causeb by our body that doesn`t have any cellulase enzymes that have to break down that cellulose substances that are commonly found in the green plants structure. So that why it is hard to us to diges that grass. Besides to break down we are actually do another progress due to our lossen. It is cook it first. That qill be de-hydrolyze the srtucture of the glucose inside. And it is helps us a lot

Grass contains something called cellulose, which the human digestive track can not break down (1). Cows and other grass eating mammals have special bacteria in their digestive tracks that break down the cellulose for them which then makes it possible for these animals to use grass as a main food source (1).

Grass contains cellulose which cannot be digested by humans as well as the apes from which we evolved and those existing now. Cows have bacteria in their intestines which can break down the cellulose.

It's true. We can't digest the celluose, but also the silica in grass would abrade and wear out our teeth very rapidly.

Also, as primates, we have a strong sweet-tooth, so we're more attracted to sweet things. Naturally, that's fruits and starchy things (some roots, tubers, seeds, and grains).

While it's not eating grass like cattle, humans can eat the seeds of wheat, barley, oats and other grains.

People discovered a while ago that it tasted ordinary and that animals were made of meat, and that meat (and other parts of plants) tasted much better.
Grass was left to smoke.
