If a Coke bottle is dropped from a plane flying at, say, 10,000 feet over the ocean, what happens? Does it shatter, bounce or what?

It would hit the ocean going about 200mph due to air resistance limiting its speed. That is called terminal velocity.

It would probably shatter at that speed.

A common misconception is that an object continues to gain speed as it falls. That is absolutely true in a vacuum, but not in our atmosphere!

1) If it is full it will shortly sink.
2) If it is empty it will shortly sink to the bottom.
You may remember a humerous film of an airplane passenger that threw an empty Coke bottle out the window while over Africa. It landed without shattering (in the sand). It was found as a "treasure" by a native tribesman and caused many social problems within the tribe.
Moral: throwing Coke bottles out of airplanes raises more questions than yours does.

assuming bottle in empty, glass will most likely shatter, plastic will bounce. Full bottle would prolly go under or shatter as well if it lands sideways

If glass then it shatters..if plastic then it will hit with so much force the bottle will be ripped and will sink

If the bottle can swim it will be fine for awhile, but if it can't say your prayers.

i would guess is that it probably matters how it enters the water. i say it goes right in if enters upside down without breaking.
