For genetic programming (where you are developing and evolving programs using a genetic algorithm), the best language to use is LISP or a LISP-like language of your own design.

I've read plenty about Python too, but a lot of it must depend on what sort of AI you are talking about. All sorts of languages can be used for a large part of it. For instance, if you're working with a cellular automata, there's no reason why you shouldn't use C/C++, it'd be just as good as anything, and faster!

lisp is a good ai language as far as i know.
