My first reaction would be embarrassment at not being able to reply fluently in my native tongue . Then I would probably say after some reflection " Dia agus Muire agat, ta me go maith ".

My reaction would be a very confused look on my face. Hopefully the person would understand that I had no clue what they said, and maybe they would repeat themselves in english.

Of course it is Ireland , and they could have come upand said that in what seems to sound (gaelic) to see what reation you would have.

I envision and older guy with a white beard, floppy hat, carrying a Guinness when I think of the situation.

I would say 'Ta me go maith agus conas a ta tu' By the way, how did you get the fadas above the letters in your irish words??

If in Clare I'd say "Hows a' goin' coam?
If in Dublin I'd say "Jazes! a fcukin' forrin' culchie.
If in Dungarvan "Go maith! Conus tá tú féin?"
In Galway "Ciosach maith! Ciocadh bfuil tú féin, a dhuine úasal"
And if I recognised his accent I'd go " Cripes! Not half bad for a Yank/Aussie/Mountie/Frog/Eyetie...."
