Example: Is there anything, if we can call that a thing, that exhibits a state or quality that defy what we understand about matter. Is there anything that stays permanent( that won't undergo transformation) or defy any known law that describes matter.

Of course, as stated above, Dark Matter makes up around 80-90% of our Universe and we have finally identified Dark Galaxies, look them up on Yahoo! As far as we know, ALMOST everything has an opposite.

Yes there is an opposite of matter its known as an antimatter which Annihilates as soon as it comes in contact with the matter.
