Most medieval movies are done pretty poorly, with little regard to accuracy.
I would recommend The Lion in Winter. Not much action, it's a serious drama, but good. Also try Robin and Marian (Sean Connery), Ivanhoe (classic, goofy but kind of fun), Kevin Costner's Robin Hood, Kingdom of Heaven, Braveheart, and for laughs the Black Adder BBC series.
Surprisingly, the armor in Army of Darkness is about as accurate as any you'll find, even though the movie isn't. It's a great laugh, though.

I really liked "Army of Darkness" starring Bruce Campbell. It was directed by Sam Raimi who has directed Spiderman 1 and 2 plus Evil Dead and The Quick and the Dead. Campbell plays a modern man sucked into a vortex back into the middle ages. He has with him a shotgun and a chainsaw. He helps the knights fight off monsters while he seeks a return to modern times. Lots of fun.

One I always thought was interesting but just a little latter than Medieval times. "Plunket and Maclean" with Liv Tyler. Funny and interesting. Also "Dangerous Liasons" with Jon Malcovich and Glenn Close. Both of these set in 17th-18th century time frames.

There's this movie called Camelot. It's not a very new movie, it's a musical, and it's about King Arthur. I give it 4 and a half stars.
Also there's Timeline, that's a good movie :).
