Peek through his internet history (usually an option on your browser tool bar) or through his temporary internet files. You can also set through Tools-Internet Options how many days to store these pages if you want a wider net to catch it in. This won't allow you to actually read his emails usually but it will probably clue you in to any extra emails (or any inapproppriate websites as well). Or you could just ask, but I get the feeling you are looking for a secret email :)

If he uses Outlook, check for different accounts in the setup.

If he was using webmail (hotmail/yahoo etc) then look in the history of the web browser (CTRL H in Explorer) and double click on website entries such as Hotmail, Yahoo and look in detail at the web address, keeping an eye out for any potential usernames in the URL/websit address.

Anything other than that (logging into his computer, opening his email programs, installing programs to spy on his activities, etc.) is an invasion of privacy.

If you feel compelled to do those things then it means you don't trust him, in which case I'm sorry you are in that situation.

install a key logger on his computer.
