I like epic power metal (like Blind Guardian) and melodic metal.
Symphonic and black and folk are good too.
I like a lot of cross genre stuff that fits more than one of these categories,

Out of those you mentioned, folk and power. Unfortunately you missed out a whole range of genres between these two, like symphonic and epic (blind guardian, rhapsody, edguy...).
These days, however, i'm having a folk metal phase. So I pick folk as the answer to your question, even if I listen to many others, too.

Hair metal....absloutely. Although I think the sub-genre of "hair metal," is rediculous, because most of those bands have nothing do do with metal, other than the fact that they have good guitar players. Def Leppard is NOT a metal band, in any form.

Thrash and old lack of existence metallic. some black metallic, and the ross bay bands interior the 80's/ninety's that dubbed themselves "warfare metallic" which turned right into a clusterfuk of lack of existence/black/thrash with some punk impression inspite of the actuality that they were oftentimes called lack of existence/black metallic, bands like this are blasphemy, beherit, archgoat, truppensturm, nuclear desecration

well, whatever the genre is, what matters is the message of the song.

although what you're trying to put a finger on is a really complicated way of classifying things. a lot of people consider what you're asking as alternative metal, generally.
