He obviously likes women, he's just a quirky character. Besides, so what if he was? Women weren't allowed on ships back then. Most sailors/pirates were either gay or at least had male/male sexual relationships when they were out to sea for months.

But given the way he acts with Elizabeth and the harlots, I'd say it's safe to say that he's at least bi-sexual or in very deep denial.
