try gruyere. thats whats the fondue place around L.A. uses. great flavour, but not over powering. for a tangier dip, try feta. for over the top on taste try blue or roquefort. the difference between blue and roquefort is the animal it comes from; cheese is roughly the same. blue is more reasonable. YUM!!!
