Because diversity implies inclusion. Not everyone is white, not everyone celebrates Christmas, not everyone has 2 parents at home, or if they do, those parents might be the same gender...diversity training helps people use inclusive language and not make generalizations that might make people feel marginalized.

There are so many customs that value certain traditions that other may find offensive. For example, I had a few students this past year that could not celebrate Halloween. I had to change many lesson plans so we could do scary stories instead.
