Most of the answers are correct in that Summer tends to be the slower season. During Spring and Fall it's extremely busy with convention business which fills up most of the rooms in town. Imagine people with expense accounts on business travel. Tough to compete when you are on a family budget.
For people to say that you are paying way to much or just right I tend to believe that they are not well thought out answers as we have no idea where you are traveling from, how long or what room type you are looking to stay in.
Look at package rates from the major Internet websites such as Orbitz.com or others. Properties specifically lower their room rates for package bookings because a package booking customer tends to be a better customer profile than a room only purchaser. Better customer profile means they stay longer, book earlier, and spends more on ancillary services such as spa, restaurant, club, and gambling of course. Plus these hotel rates are matched with bulk airfares whenever possible so you are truly getting a discount over purchasing individually.
While you used to be able to get lower priced packages, times are changing - properties are more savvy about attracting specific types of customers and not eroding the relationships they have with the major Internet travel companies who routinely fill their rooms. Usually they maintain rate parity with the big three travel websites.
Last item - forget the car unless you are going out of town or golfing. Everything else is easier to get to via cab and less time and less money.

I've found out that the "package" deals aren't always the cheapest. They might be a little less time consuming to you, the traveler, but if you're willing to put in a little research and time, it may be cheaper to book your own flight and hotel room. The first time we went, we did a package. I've gone about 5 more times and have always been able to book everything for ALOT less. Alot of the casino/hotels have very good room rates. And I agree about not going in summer. We went last August and it was like being in an oven whenever we went outside. The first part of the year is nice weather-wise.

Vegas is a "demand" based city. The more folks that want to stay there on any given day, the more expensive the hotel rates will be.
Things that can drive up the cost of rooms: weekends (always more expensive tha during the week), holidays, major events in the city (prize fights, award shows, big concerts, etc) and trade shows.

Be thankful you can't go in July, it's WAY too hot there now. It costs more to go during Spring, Fall and Winter months because people are more likely to want to visit Vegas when they could actually walk around outdoors without being so uncomfortable from the heat. Pay the extra to go in March. Trust me, it'll be worth it and a whole lot more of a pleasant experience. :)

Because in March it is considered PEAK season. The weather isn't as hot and a lot of college kids go for spring break.

MARCH....IS more expensive b/c of the NASCAR and WORLD OF OUTLAWS..come to town....They raise the rates a min of 200 dollars that weekend b/c they know the people will pay for it..and It fills up QUICK>>>so if your going in MARCH (DO IT NOW)..B/c by Thanksgiving....the rates go up and up..200,000 NASCAR fans screaming that weekend lol

July it is 110 degrees so it is cheaper then than in March when the weather is better.
