Maria's Italian Kitchen has pretty decent carbonara, but it's not really a trendy place; it's more of a family style home-made food kind of restaurant. They also have several locations around LA.

When this question was asked of the LA Weekly food critic a couple of weeks ago, he chose Enoteco Drago in Beverly Hills.
Also good are Angelini Osteria. Il Forno and Dan Tanas also make it.
