Flies don't gestate they lay eggs hence they incubate.
Depending on the species of fly and the temperature the eggs incubate anywhere from 4 days to three weeks, when they hatch they become larvae which later transforms into flies.

Flies don't have gestation periods as gestation periods are only for mammals. Instead they go through a metamorphis - egg, larva, pupa and adult. The eggs are laid on all sorts of wonderful things ie: decaying flesh, dung or pond water. Hope I answered your question!
