Several reasons:

1) Coral reefs serve as habitat for a variety of other species, providing shelter and protection for prey fish as well as convenient places for predators to hide (like moray eels). This is why some governments actually create artificial reefs for wildlife by sinking decommissioned warships.

2) They also serve as a source of food for other species, like parrot fish and sea urchins.

3) Coral reefs, being unable to move, are a good indicator of the health of a local ecosystem; where coral reefs start to die for whatever reason, the rest of the ecosystem follows.

4) For humans, coral serves a major economic purpose, both in coral jewelry in the limited amounts we are able to harvest it without destroying the ecosystem, and in tourist dollars -- if the fish don't congregate around a reef, no one will snorkel or scuba dive, because there's nothing to look at.

Coral reefs provide food for fish, fish provide food for bigger fish and for us. They are an important part of the food chain for the oceans. They also help to filter the water of small particles. A lot of wildlife would die if it weren't for the reefs.
