It's actually an entire sentence that encapsulates the meaning of the colors which roughly translated means:

From the darkness of bondage / servitude (black) through bloody battles (red) to the golden light of freedom (gold).

There's according to my knowledge no symbolism behind the single colours.

In 1813 there was a military unit called the "Lützower Freikorps" fighting against Napoleon. They were supported with only little funds by Prussia and it was cheaper to produce black uniforms than blue uniforms (the prussian colours). They had red collars and golden buttons on their uniform.

A lot of students joined them and they were known for fighting really hard. They became a symbol for Germany's freedom movement, and formed a kind of union fighting against France.

In 1848 the first flag as we know it today was introduced as the official German flag.

To sum it up, it's a symbol for "Germany's" united fight against France and thus a symbol for Germany's unification and fight for freedom

It's said the symbolism is red for blood, black for soil. Not sure about gold.
