Because Bill has turned his back on honor and become an assassin. Try to put it in the context of the way of the Samurai (Bushido - the warrior code) and Japanese society and culture, where honor is a very real concept. To Hanzo, Bill has taken something sacred and beautiful, and perverted it in the worst possible way. Hanzo realizes that it's not the swords that are to blame, it's the evil nature of them men that use them. The only way to regain his own honor is to right the wrong that has been done, and do away with the perversion of his gifts.
Also, in repsonse to those who are making claims about unclear motivations of other characters, all it takes is a little thought to uncover them. It's obvious that Elle hates Beatrix because Bill is in love with Bea and ignoring her. She's jealous of that, and of the fact that others were able to train with pai mei and complete the training intact, demonstrte more skill as a warrior, etc.

I think this is a natural part of the Tarantinoverse, when characters do things with unclear motivation. We know, for instance, that Elle Driver hates The Bride but we don't really know why. Since this is early in the story, both chronologically and in the way QT presents it, I think he uses it as a device to show the cruel, vindictive nature of Bill and the response that it causes out of people. It makes Bea's quest more powerful because she is not merely fighting for herself.
Also, whenever Bill speaks of Hanzi in the movie, he speaks angrily. I'm guessing they had a falling out at some point.

Beacuse he trained Bill and gave him a hand-made sword. He
was prideful of Bill until Bea told HH what Bill had become. And what Bill had done to her.
Remember that scene in the atic where HH kept his swords?

I am no authority but I assumed it was because of the unscrupulous way Bill and crew used his weapons. I think he felt he was dishonored. Or it might be that he knew the story of Bea and felt Bill was not honorable.
