I will be graduating with an associates degree to be an RN and I've considered a bachelors or masters in Nursing but I don't want to limit myself to such a specific area. I feel that Nursing is a great base to start from and build on. I've considered Kinesiology, don't want to be a doctor or PA, and don't really know what else nursing could help me with. Any suggestions?

Go online to the web site of a good university's nursing school (like University of Pennsylvania). They probably have several links showing the different fields within nursing and describing the different specialties within nursing.

A bachelor's degree will open some other doors for you -- as will a MS. I believe a BS is necessary if you want to become a school nurse, for example.

I had a friend in my Information Systems class who was a registered nurse but wanted the computer background as well. She indicated that this was a fairly untapped field as the requirement for the medical and computer knowledge was met by very few qualified candidates.

Why don't you just try being a nurse for now. and specialize in one of the fields of nursing, like maternity, or OR, or psychiatric. Mind you, many hospitals will only hire BA nurses these days, and are willing to help pay for specialized courses after hiring them
