google up the spud-gun guy. He has good information, and sells kits as well as finished guns. Depending on the fruit you want to blast, some might be too soft to send flying.
Spuds usually get trimmed to fit the barrel of the device, some fruit may need to be "patched" to fit, i.e. a paper towel or two placed over the opening, then the fruit pushed in to make sure it fits well.
