What would the computer equivalent be of the PS2:
1. Video?
2. RAM?
3. Processor?

Basically if I built a computer that I wanted to have preform like a PS2, what would it consist of?

There's really no equivalent. The beauty is in the "Emotion Engine" processor developed by Toshiba. The CPU is specifically designed for floating point operations, the kinds of operations typically used in graphics operations. The primary processor is only 300mHz, but it can handle 6.2 billion floating point operations per second, faster than a 1.4gHz Pentium as handling graphics. The PS2 also has two more processors for performing floating point multiplication, two processors for calculating vectors, a processor for multimedia command, and a processor for decoding images. All of this is contained on a single 128-bit chip. (Standard computers use 64-bit chips.)

Comparing a PS2 to a PC is really comparing apples and oranges. They accomplish similar tasks in very different ways. If you want similar, if not better, performance, you should be able to get it out of a 2 gig processor, 2 gigs of DDRAM, and a Geforce 7 video card.
