Of course everything is relative. Its the underlying principle behind Einsteins theory. If you take measurments / observe an event, etc some other person, be they on another planet, galaxy, place etc will not always get the same measurments / observe things exactly as you do. So no, notihng does defy this rule, if so then you have disprooved Einstein.

If you're referring to the principle of relativity in physics, you don't understand it. It states that the laws of physics are the same for everyone everywhere at every time. Most physicists accept this as an axiom, since otherwise we couldn't make sense of the world.
Remember, relativity says that the laws of physics--the underlying structure to the universe--are NOT relative. The consequence of this is that some fundmental physical properties (like time and distance) appear different when you observe them from different places.

All beginings must have a starting point. so when we measures from that point even though its moving we say it has a zero motion frame of reference.Hence we say the measurement is relative to that point.
One of the argument about relativity theory is that there is no absolute frame of reference. Hence it answers your question It does defy the rule.
Now whether this is true or not is just a matter of preference how you interpret it.

Th chiral anomaly.
It would be the basis of communicating with a remote intelligence because it would allow us to tell them what we consider right and what left.

Reality itself could be relative so I'd say there are no absolutes.

Yeah, my mother-in-law. She's just awful. She's not awful compared to someone else or less awful compared to someone else, she's just awful.
