Interesting...perhaps a Sphinogriff (working on the basis that the mix of a horse and a Griffin is a Hippogriff)?
The Sphinx was the daugther of the Chimera and Orthrus so the Chimera is probably out of the question.
Offspring of the Griffin are very rare, the Hippogriff being one example of an impossible being in ancient mythology.
In all likelihood, if it were possible, the offspring would look very similar to the parents-both have Lion's body, both are winged, the only major difference is the head. The Griffin has an eagle's head, the Sphinx can have bird, ram or human head. They are essentially the same in appearance, but are found in different locations (Africa is more of a home to the Sphinx and Asia and Europe to the Griffin).
I don't think there are any examples in ancient mythology of an offspring of both.

They probably would look similar, maybe with 2 heads, one human, one eagle? Or maybe some would be gryphons and some sphinx. Anyway gryphons ARE found in Africa (Egypt is known to have had some, where they also had snakes' tails) so it could be possibe lthat they would meet.

I reckon a Gryphinx would be the most logical name, but whether it had a human head or an eagle head would depend on which genes were most dominant. And whether it had wings, that would depend on whether the Sphinx parent was an Egyptian Sphinx (no wings) or a Greek one (with wings).

Dr. Seuss some years ago conducted an experiment along these lines, and came up with the "Grynx". But he had to change the spelling to "Grinch"-- and engage it in the act of stealing Christmas-- before the idea worked. [A couple of "Spyphons" were born in the same litter, but he left behind no written research on their fate.]
