It's because American Anime only takes on the style and art of Anime, and it overuses Shojo and kid things like facefaulting, falling on the ground with Legs in a position that defies physics, Overusage of Chibis (In length and number of times used), Random emotional backgrounds (Like Volcanos, Splash, Fish, and those items), Heart-eyes, and sweatdrops. It does all that and keeps american-style cartoons in terms of plot, which makes it far more predictable.
I find Anime predictible, but less so than american cartoons (Spoiler for Saiyuki) Who would have thought that Kougaiji wasn't the one pulling the strings? (/Spoiler for Saiyuki)
Anyway, American Anime is predictable because of the following:
A. Art and Animation: Shojo-esque and overusage of emotional signs
B. Plot: Still follows American tradition of making sure 3-year-olds know the last episode's story before the first episode comes out.

90% of "American" anime is actually Japanese anime that has been poorly translated or not translated at all and the Japanese script discarded. The original voice track is removed and replaced with the cheapest English-speaking voice actors available, which usually results in the voice acting being some of the worst possible. Plots are altered or re-written completely so that "dumb Americans" can understand them, losing the fine detail and subtle overtones of the Japanese writing.
The solution: learn Japanese and buy only direct imports.

There is no such thing as american anime. Anime is a style of animation developed in Japan.
There are major cultural differences between american animation and japanese animation.

because most american anime is made by people who draw most inspiration from older anime shows, so there is this kinda been there done that feel to all of them. im not complaining, i like it all
