Since the weather's hot, how about a chilled pasta dish?
Choose your favorite pasta, and when cooked al dente, place in a bbowl and mix in:
1 cup sweet red pepper paste
1 cup chopped water chestnuts
1 cup chopped sweet pepper, vaiety of choice
1/2 cup chopped sweet onion
1/2 cup tarragon vinegar
1/2 cup virgin olive oil
salt and pepper to taste
Chill.
Serve in pasta bowl. Top with slices of red, yellow and green sweet pepper.
Enjoy!

I have served this to guests and it's always been a hit.
Use whatever your favorite pasta is, linguini, angel hair, etc. Grill or saute some portobella mushrooms whole. For the sauce, put a can of chopped tomatos, a can of tomato paste and a large seeded and cut up fresh tomato in the blender and puree. Saute some garlic and onion, then add the tomatos to that. Add oregano, rosemary and thyme, as well as some salt and pepper, as the sauce heats. Put the mushrooms on a cookie sheet and top them with shredded mozarella, then put them under the broiler until the cheese melts and gets a little brown. Then plate the food: pasta, sauce, mushroom, a drizzle of sauce and then some parmesan on top.

Why not try a linguine with shrimp, scallops, peppers, garlic,and mushrooms sauteed in lemon juice and butter. Use an alfredo sauce as the topping. Serve with salad and toasted garlic bread. I'm hungry just writing this recipe !! Good luck - have fun !! Pete

My grandma pasta recipe :)
cook the pasta in boiling water with some salt.
cut some ham in small bits
make a "bechamel" : in a saucepan put 30 gramms of butter, when it's melted add 30 gramms of white flour. Stir well.
Then out of the fire add 1 pint of milk.
Put on the fire again and stir gently until the "bechamel" isn't too liquid.
Add the ham in the bechamel, and some cheese too.
Put your pasta in a dish, add the bechamel, stir weel, add some cheese on top of it, and put in the oven.
When the cheese on top is golden, it's ready !

1/2 package (16 oz) angel hair pasta
2 Tblsp. olive oil
2 cloves garlic, crushed
1-1/2 ounces sun-dried tomatoes, softened and chopped
1/2 (8 oz) package tomato basil feta cheese, crumbled
1/2 cup grated Parmesan cheese
1/2 bunch fresh cilantro, chopped
salt and pepper to taste
* I like to add pine nuts and chopped olives as well, it gives it a good flavor
Cook pasta as directed.
Mix all other ingredients and serve over warm pasta

Simple! shrimp alfredo. you can either buy a can of alfredo and buy the frozen bagged shrimp or you can make the alfredo from scratch and but the shrimp from the deli.main ingredients in alfredo are creamer and parmesean cheese
