Being in the book business, I can verify that there is no onsale-date/publishing date for this book as yet. The date 07/07/07 is a rumor only at this time.
As of 26 June 06, the City Paper quotes J.K Rowling herself as stating:"I am feeling sad as it is the last one. But so far, so good." But when pressed on when the book would be ready for publication would only say "I'm doing well I think. You can never really tell till you get near the end. I am not quite there yet."

It has been rumored to be released on 07.07.07, due to the fact that the number seven has an important magical significance in the Harry Potter books. J.K. Rowing has not shot this theory down, but I have trouble believing it because of the release date of the fifth movie. It is set for July 13, 2007. If the book and the movie were released so close together, there would be a fight for publicity.
However, I think it's safe to assume that the book will indeed come out in 2007. Liz Calder, the Director of Publishing of Bloomsbury (who publish the British versions of the books) said in an interview that, "The next Harry Potter book is likely to come out in 2007. I hope so."

Well all signs point to late next year. I'd say sometime well after the movie 5 is released in July. My educated guess would be September. However there is no official date yet as JKR is still writing the book and is not near the end yet (and remember even when she is finished writing it has to go to the editors and who knows how many revisions).
If you'd like to be informed the moment there is a release date there are several sources you can use all of which I will list below. If you search Amazon for Harry Potter Book 7 they will alert you when the book will be available. I'd suggest going to both Amazon.com and Amazon.co.uk since the UK edition will be released first. Also go directly to the publishers sites, there are two: Scholastic & Bloomsbury (urls listed below). JKR's site is probably the most accurate source for information but the The Leaky Cauldron is a very close second and even JKR recognizes there site as being accurate (check out Fan Site section on her site). Leaky has an entire area dedicated to Book 7 news (url below). Also you can add The Leaky Cauldron RSS feed to your My Yahoo! page. Email me for info on how to do it.
Go to the Leaky Cauldron site below and scroll down to read Book 7 news there will be loads of info from reliable sources pointing to mid to late next year.

PS: It is HIGHLY unlikely for the book to be released on 07/07/07.
The Order of the Phoenix Movie is scheduled to be released on 07/13/07 and it would be bad for sales of either for the two to be released so close together. Please do not let people misinform you with guesses or bad sources. DO NOT trust any information that connot be traced back to JKR or her publishers.

It looks like a good 2007 summer release, in July, for normally all the movies and books are released the same month everytime, Movies in November, Books in July.
