David and Leigh Eddings. They have several series out and they're all incredible! The minds on these people are just astonishing. Their books are easy to follow, but so indepth and involved that you're hooked once you start.
The first series they did is called The Belgariad and is five books long. They continued that with another five book series called The Mallorean, and added two additional single books on the end. That is really all one series.
They've done others, but start with The Belgariad. Just awesome.

Great question! I'm looking for a good fantasy series too. My absolute favorite is The Chronicles of Thomas Covenant by Stephen Donaldson--there are two trilogies: Lord Foul's Bane/The Illearth War/The Power That Preserves make up the first; and The Wounded Land/The One Tree/White Gold Wielder are the second. He also recently released The Runes of the Earth, which is supposed to be the first in a third and final trilogy. These were incredible--definitely give them a try!

The Neverending Story by Micheal Ende is wonderful. (I know I'm not the first to mention it, but it's worth seconding.)
If you like books from which great movies were made, The Princess Bride by William Goldman is also a lot of fun.
For something a little more sci-fi and a little more highbrow, try The Eyre Affaire and its sequels by Jasper Fforde.
I also recommend the Belgariad (a series) by David Eddings for a fun fantasy.
If you liked Harry Potter, you may also enjoy the Young Wizards series by Diane Duane. The first one is called So You Want To Be A Wizard.
For some historical fantasy, try some of Marion Zimmer Bradley's books, specifically The Mists Of Avalon about the time of King Arthur and Firebrand about the Trojan War.
I'll also second the person who recommended the Chronicles of Narnia by C.S. Lewis. It has some theological undertones, but is a great collection of stories whether you read them that way or not.

I love Tolkien. I enjoyed The Hobbit, Lord of the Rings, and The Silmarillion.
I love C.S. Lewis. I love The Chronicles of Narnia.
Orson Scott Card has a great book called Enchantment which is a modernized version of Sleeping Beauty set in US, Russia, and a fantasy land. It is very fun. :)
The Princess Academy by Shannon Hale is also good.

Terry Pratchett's Discworld series are absolutely awesome. They've got everything -- great fantasy, wonderful characters that you get to meet again and again, they keep showing up but they're interesting because they change and grow. Also they're fabulous satire on everything you can imagine, from various cultures, histories, religions, literature... they're great reads, they go by really fast. Sometimes Pratchett teams up with Neil Gaiman and that stuff is good too, but I realize I'm the second person to mention that combination.

I'd agree with Robert Jordan's Wheel of Time series, the Dragonlance series. But I'd really like to second Edgar Rice Burroughs. His two series, Tarzan and John Carter of Mars, are excellent. I didn't like his Venus series as well. He also has a Journey to the Center of the Earth-type of series that are good.

The Eyre Affair by Jasper Fforde: amusing first book in a series about a literary "secret" agent. The characters in fictional books have a semblance of life, and novels keep chaniging content.

The Lords of the Rings got me started in fantesy. I reccomend Robinm Hobb, either the Assassin trilogy or the Liveships. Brain Jaques wrote some really cute stories in his "Redwall" series. "Carpe Demom" was a superfun book, about a demon hunting soccor mom. Neverwhere, by Neil Gaiman, was awesome.
