There are two types of tomato plants: Determinate and indeterminate. Determinate varieties grow into a nice bush and produce all their tomatoes at one time. Then they are through. Indeterminate varieties keep growing- and producing- for the entire growing season. If you want "pretty" plants get determinate varieties. But you shouldn't try to trim indeterminate ones into something they are not. Let them grow. They are just doing their job. I have 60 tomato plants in my garden and just keep them in cages. They ain't pretty, but the tomatoes are glorious!

pinch off the tops and add epsom salt to the soil... about 1 teaspoon into the soil of each plant every couple of weeks. Water well.

If you dont want them to grow "up" just leave the "sucker plants" on them.
(Thats the little leaves that grow just above the leaves and takes the nutrients out, so that it can grow up).
This will stymie the plant and it will grow out, instead of up.

when they start to bloom, pinch off the extensions surrounding it, this will make the plant grow fuller instead of taller
